Get Big Rock Beef!
Here is the scoop on getting grass-fed and finished beef from our pastures to your freezer! Our cows range lush pastures, enjoy being cows, and get horse-hay (premium) quality hay, free-choice, when pastures are dormant. These cows live the dream with minimal inputs from us besides love, attention, and grass hay. A special note about these particular cows that are available this year is that they have feasted on apples from our tree!
Now to the particulars.
What are the options?
We are excited to have 1/4, 1/2, AND ground beef boxes available this year!
1/4 or 1/2 Beef Shares
This means you buy a part of the live animal. A deposit is needed to show ownership. This is how we have to do it to be legal.
$6.50/ # Hanging Weight and covers/includes all fees(slaughter/waste/quartering) and basic cut and wrap. Specialty instructions (jerky, etc.) are not included and will be charged separately by Cinder Butte to the share owner. Expect a quarter to be $900-$1400 based on a hanging weight ranging between 600-800#. These are approximates based on our experience and could fall above or below.
A $100 deposit secures your quarter.
Butchering will happen in November; the carcasses hang for a set period of time before being processed. Pick-up will likely be the first of December. You must pick up your share from Cinder Butte in Redmond.
The hanging weight for the whole beef could range from 500-800 pounds. This weight is once the beef is a hanging carcass ready to be processed. The take-home weight will be 60-80% of the hanging weight due to water(while meat cures) and bone loss. If you take your share of bones and choose cuts like ribs, you take home more.
Cinder Butte will call and go through the cutting instructions with each share owner. You decide the thickness and kinds of steaks, kinds of roasts, and weights of packages you want. You can ask for soup bones, fat for rendering, and offal(kidneys/heart/liver). Fat and offal are NOT automatically included; you must request your shares worth. All meat is wrapped in a sheet of plastic and butcher paper and is clearly labeled. We find meat keeps multiple years this way.
Bring your own coolers/boxes/containers/bags to transport your beef share home and have your freezer ready at home!
A quarter cannot be divided more on our end or the processor’s. If a quarter is too much and you want to find another person or family to share it with, you must divide it after it has left Cinder Butte.

Ground Beef Box
$160 for 20 1# packages of premium ground beef. Steak and roast cuts will be in this ground meat! 90% lean which means they grind in about 10% of that animal’s fat into the ground. This is standard. Packages will be wrapped in a sheet of plastic and butcher paper. This, too is standard.
This is a young cow we’ve had since she was a heifer(a yearling before calving). She does not meet our standard for breeding due to hoof problems; we do not want her passing this confirmation to offspring. She is NOT an old cow by any means!
