I guarantee that these cookies are healthier with fewer sugars, decent protein, modest carbs, and sufficient fat than the average ‘paleo’ bar or cookie option. In addition, there is no guilt to feel when enjoying these treats. Pair with a tall glass of raw milk from your local grass-fed dairy, and what more could anyone ask for!? From making them together to eating them together, we have so much fun!

Our house has unanimously decided that these are the best ‘cookoes’, as Clancy says, yet. There isn’t a glutenous cookie out there that has anything on these! The recipe is also very versatile. Chocolate chips and walnuts can be replaced by craisins and pecans or chopped figs and cashews.

These cookies use a technique I have never encountered in any other cookie recipe; they are placed back into the oven after being fully baked. At low temperature, the secondary oven time gets these cookies nice and crispy on edge and outside but still chewy on the inside. They are delicious.

We enjoy an altered version of the recipe on the back of the Wellbee’s Almond Flour bag. Something about a recipe forces me to make changes to it; I guess that is just the rebel in me! However, I don’t regret my roguish experimentations at all. With my extra creative touches, these cookies are the next level bomb.

Clancy loves to read If You Give A Mouse A Cookie right now, and as he goes to get the book, he yells, “Cookoe!”. We had to bake cookies to support his interest in this book, and now he asks to bake cookoes with me. Not without struggles, we beat the egg, add all the ingredients, and smack the dough on the cookoe sheet. The kitchen will never be a stranger to him but will be filled with memories of togetherness and yumminess.

I chose to cut the honey with another sweetener for a couple reasons. First, raw honey loses its magic once heated in the oven; the enzymes are destroyed at extremely low temperatures. Secondly, honey is fructose, which can negatively impact blood sugar regulation(hello hanger, energy crashes, anxiety, jitters, afternoon headaches, yawns, and fatigue). Fructose is entirely metabolized by the liver, which causes it stress. Brown rice syrup contains no fructose and is a great sweetener to replace honey and maple syrup for blood sugar and liver health.

The other change I made was to replace a portion of almond flour with cassava flour to reduce the gritty nature of almonds. This also reduces the fat and increases the carbohydrates while diversifying the fiber source. All spades when the goal is a balanced, healthy diet.

I haven't had craisins or raisins on hand and haven't wanted to chop dried figs. Still, we have pounds of high-quality chocolate chips from Santa Barbara Chocolate Co. Chocolate chip cookies are also more popular than dried fruits in our house! So I reduced the amount of chocolate chips rather than using an entire 1/2 cup, and we have plenty of chips in them!

  • 1 egg

  • 3 tablespoons virgin coconut oil, soft at room temperature

  • 1/3 half raw honey and half brown rice syrup

  • 2 teaspoons vanilla extract

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon Redmond Real Salt

  • 1/2 cup cassava flour

  • 2 cups almond flour

  • 1/2 cup shredded coconut

  • 1/2 cup walnuts/pecans

  • 1/4-1/3 cup Santa Barbara unsweetened chocolate chips

I follow the instructions to the letter until it is time to get the dough onto the parchment for baking. I use a two-tablespoon measuring cup to scoop up the dough, and then I fling it onto the pan. It works weirdly well and is wild fun! Then, after baking and cooling, I put them back in. Still, I usually don't have the patience to let them hang out for an entire hour and a half, but I typically get at least forty minutes in at 170*.
