I’ve always thought of Pumpkin Pie as being an arduous, finicky labor of love. It doesn’t have to be though.
This Pumpkin Pie with Almond Crust is incredibly simple and always turns out. I’ve made this recipe maybe even one hundred times. We LOVE it and ate this on a weekly basis during the rise of COVID lockdown.
I’ve never had it not turn out and when you make something enough times, you’d think at some point you’d have a flop! I usually put this recipe in a square 9x9 dish for pumpkin pie bars. I’ve even used a springform cheesecake pan for extra fun at my son’s first birthday! It is forgiving and flexible.
